I went through the exact same thing last year. Honestly, don't rely on apps for the 'freeze'—it's a psychological barrier, not a knowledge one. When I started, I found that telling the barista 'Atvainojiet, es mācos latviski' (Sorry, I'm learning Latvian) immediately lowered the stakes. It breaks the tension and most locals instantly switch to being very patient. Also, watch out for the stress patterns—Latvian stress is almost always on the first syllable. If you nail that, you’ll sound much more natural even if your cases are messy, and that confidence boost will help you get past the initial block.

The 'freeze' is usually because you're trying to mentally construct the full case endings for the accusative or genitive cases in real-time. My advice: stop trying to be grammatically perfect. Locals will appreciate the effort even if your endings are off. Try the 'three-sentence drill' before you walk into the cafe: 1. 'Labdien!' 2. 'Es gribētu vienu kafiju, lūdzu.' 3. 'Paldies!' Don't overthink the palatalization of the 't' in 'gribētu' yet; just focus on the rhythm. If you get stuck, just point and say 'Lūdzu, vienu šo.' Keep it simple until the muscle memory kicks in.

Chickytutor can be okay for basic vocabulary, but it often lacks the chaotic background noise and social pressure of a real Rīga cafe. If you use it, set the 'aggressiveness' to high so it interrupts you. However, I’d suggest a different strategy: record yourself saying your order 50 times until you can do it while doing something else, like washing dishes.
