Don't sweat the word order too much. Latin is inflected for a reason—the case endings do the heavy lifting that English word order usually handles. In speech, try the 'New Information' principle: put the most important or surprising word toward the end of the sentence. If you are nervous, stick to a basic SOV structure (Subject-Object-Verb), but don't be afraid to put the verb first for emphasis or stylistic flair. If you're leaning toward Ecclesiastical Latin, look at how the Vulgate or hymns handle flow—it’s often much closer to SVO than the hyper-batonic style of the Classical period. You don't have to mimic Caesar’s complex periodic sentences to be understood. If you get tangled, just use the 'Verb-Subject' order, which is perfectly idiomatic in late Latin. My advice for your coffee meeting: focus on your macrons and clear articulation of the case endings. If you mess up the word order, the case ending will save you; if you mess up the case ending, the word order won't matter anyway. Prioritize the inflection, let the syntax follow naturally.

I dealt with this by doing 'sentence stretching' drills. Take a simple sentence like 'Puella librum legit' (The girl reads a book). Now, add an adjective or adverb and shuffle it. 'Puella librum *magnum* legit' or '*Magnum* puella librum legit'. By moving the adjective to the front, you’re emphasizing the size of the book. Doing this with mundane sentences helps you decouple word order from 'meaning' and associate it with 'emphasis.' When you're at coffee, just remember: as long as your case endings are clear, the meaning won't be lost. Your partner will be more impressed that you’re attempting to speak than if your syntax is perfectly Classical.
