I grew up in Aarhus, and I promise you, they aren't trying to be rude! Danes are just incredibly impatient conversationalists. If you want to keep the Danish going, don't ask for permission. Just say, 'Prøv lige at hør, jeg vil virkelig gerne øve mit dansk, så kan vi holde os til det?' (Listen, I really want to practice my Danish, can we stick to that?) It sets a boundary early. Also, focus on the 'blødt d.' If you drop the d’s correctly in words like 'mad' or 'rød,' you’ll sound 50% more local immediately. Keep at it—family dinners are the hardest place to practice because of the pace.

The 'soft d' and 'stød' are exactly why they switch—Danish speakers often subconsciously switch to English the moment they detect a struggle because they want to be 'helpful.' To bridge this, stop trying to form full complex sentences. Instead, use 'fixed phrases' to anchor your flow. Practicing the stød (glottal stop) in common words like 'mand,' 'bil,' or 'vej' will make your speech feel more rhythmic and less hesitant. Try a drill: record yourself saying 'Jeg vil gerne tale dansk' and focus on the vowel reduction. If you can master the cadence, they will hear you as a speaker rather than a learner and be much less likely to pivot to English.

I went through the exact same thing with my in-laws. The 'freezing up' happens because you're trying to translate in your head. Stop that. Get a copy of 'Dansk i brug' or similar materials and force yourself to do shadow-reading aloud for 15 minutes a day. You need to automate the word order—especially the V2 rule (verb in second position). If your word order is jerky, they assume English is the path of least resistance. When they switch, use a polite 'Sorry, dansk tak!' with a smile. It works, and it signals that you're committed to the struggle.
